What kind of wine it is
Il Meriggio produced by Fontodi is an organic white wine with a vibrant character, originating from the Colli Toscana Centrale area. This blend combines Sauvignon Blanc and Trebbiano in a profile that is both structured and agile, with fermentation in stainless steel and partial ageing in amphorae. On the palate, a distinct minerality stands out, reminiscent of river stones, supported by a lively and refreshing acidity. The tasting reveals precise aromas of crisp white fruit, fresh herbs, flowers and a light peppery note, defining a sophisticated and complex drinkability.
Where it comes from
The grapes come exclusively from the La Rota estate, a Tuscan plot with a privileged northern exposure that ensures the natural freshness of the bunches. The vineyard, managed strictly using organic farming, hosts an ampelographic heritage mainly composed of old vines grown using the Guyot system. Thanks to a limited production, the winery is able to fully enhance the territory's vocation and the balance of its historic plants.
How it is produced
The journey in the cellar begins with a temperature-controlled fermentation inside stainless steel tanks. The wine then rests on its lees for six months: the majority of the batch matures in steel to enhance its absolute aromatic purity, while a small percentage ages in terracotta amphorae and barrels. This precise technique adds depth and roundness, keeping the sip consistently taut and ensuring a harmonious, persistent finish.

Fontodi is a certified organic farm and covers 170 hectares, of which more than 80 are planted with vines. The principles of naturalness and sustainability inspire the agriculture that is practised: not only are no synthetic chemical products used, but an attempt is made to make the most of the company's internal resources by reducing external inputs. For example, the vineyards are fertilised using compost produced by combining pruning residues and manure from the farm's own Chianina breeding.
