How it is produced
In the winery, the work of Feudi di San Gregorio aims to preserve the richness of the varietal aromas intact. The process begins with fermentation in stainless steel tanks at a controlled temperature, ideal for extracting fresh and linear aromas. Subsequently, the wine undergoes a period of ageing on the lees for about five months, always in steel vats. This period in contact with the yeasts enriches the sip, giving it greater roundness and ensuring a solid taste balance between the natural acidity and the typical savoury expression.
