Franciacorta Extra Brut is part of the company's Riserva wines. For its production, only grapes from the oldest vineyards are chosen. This wine is made of grapes from 12 vineyards located in 6 towns of Franciacorta.

Roberto Gatti was born into a family of farmers and winegrowers in 1953 in Cazzago San Martino, Brescia. After a few years, he moved with his whole family to Erbusco in the heart of the Franciacorta area. In his youth, he worked with his father in a well-known winery and later in another for about 20 years as a cellar and vineyard manager. During these years, he became thoroughly familiar with Franciacorta viticulture and its peculiarities. At the same time, he deepened his knowledge of the most modern oenological techniques, enriching his wealth of experience. In 1975 he married Andreina, and they bought 4 hectares of land in Adro and Erbusco in 1990. The same year he also received a proposal to manage a small winery no longer used by the elderly owners and began to make his first wines, which were initially sold only in bulk. Finally, with the 1991 vintage, he presented two bottled wines, a Terre di Franciacorta Rosso and a Bianco. As a result, Ferghettina originates. The following year Roberto, on the strength of his twenty years' experience in the sector, produced the first Franciacorta, a Brut, still the company's workhorse today. In a short time, great strides were made. Thanks to many people's consideration and esteem, he could rent numerous plots of land (20-25 years), which he then managed to cultivate according to the most careful viticultural rules, the primary objective always being quality. Today, the company manages 100 hectares of vineyards spread over 6 towns in Franciacorta to better exploit the differences in the various terrains and draw unquestionable advantages in terms of quality. Of these, 65 are planted with Chardonnay, 8 with Pinot Noir and the remainder with red varieties (Cabernet Sauvignon, Merlot and to a small extent Nebbiolo and Barbera). Wine making The whole grapes are pressed with a pneumatic press, gently extracting the juice. During vinification, the must is separated into two fractions: the first must, which has the best quality juice used to produce Franciacorta, and the second-press juice, which is not intended for bottling. Alcoholic fermentation occurs in stainless steel tanks at a constant temperature of 16 8°C. The base wine rests in vats until the spring following the harvest.
