The soils, dating back to the Upper Middle Pliocene, have a composition that varies according to exposure, alternating between calcareous-clay marls and calcareous-sandy soils. How it is produced
The grapes are selected upon reaching perfect ripeness and sent for fermentation in stainless steel tanks. The maceration, lasting eight or nine days, ensures optimal extraction of colour and structure. After malolactic fermentation, the wine matures in small French oak barrels for a period ranging from eighteen to twenty-four months, acquiring complexity and finesse. The process concludes with bottle ageing for at least six months, an essential step to best integrate the wood notes and ensure excellent ageing potential over time.
