Description
Brunello di Montalcino can be considered the finest example of Italian red wines in the world. The history of Montalcino wine dates back to the Middle Ages, when it was still a niche product. In the mid-18th century, a local pharmacist, Clemente Santi, experimented with producing his own red wine, called Brunello, which won him major international recognition. Its ruby red color comes from the fermentation of 100% Sangiovesi grapes, making it a high-quality wine, so much so that it has received DOCG certification and therefore its production must follow strict regulations. This wine is born in beautiful Tuscany, in the province of Siena, and specifically in the mostly hilly terrain, no higher than 600 meters, of the municipality of Montalcino. In this small community near Siena, numerous families work hard to produce this excellent wine, one example being the Fattoria dei Barbi. After the summer months, between September and October, when the Sangiovesi grapes have reached their peak ripeness, the harvest begins. The entire Montalcino community participates in the harvest. From vinification to storage, everything takes place in the production area. This wine requires at least two years of aging, exclusively in oak barrels. To meet international standards and guarantee its organoleptic properties, it cannot be released for sale until the year following aging. Bottling, exclusively in dark glass and sealed with a cork, is another distinctive feature of this excellent wine.

| Wine making | The destemmed grapes underwent a sudden drop in temperature to 16°C in a CO2-protected environment. This cooling process of the grape skin allows for a higher extraction of the anthocyanin and polyphenol content. Alcoholic fermentation occurs in steel tanks for 16 7 days at a controlled temperature of 27-28°C without exceeding 28°C. After racking, malolactic fermentation takes place. |
