Description
Selection of the harvested grapes with three sorting tables. Destemming and crushing with fermentation and maceration in stainless steel tanks. The must is pumped over the cap repeatedly at a controlled temperature. The malolactic fermentation takes place in the stainless steel tanks before the ageing in the oak barrels.

In 2004 we began building the new, spacious and rationally thought-out cellar for wine-making, ageing and refinement, specifically to improve handling of the selected grapes produced with extreme care in our vineyards so that we can offer the market truly characteristic high quality wines, which is fully harmonised with the soil and climate where the vineyards are located. Because of our desire to create quality in all its smallest details, a cellar has been designed to "process" the grapes using gravity. This avoids useless pumping and replaces the pump under the house which has been rendered inadequate by the company's transformation.
