Where does it come from
The grapes come from six villages located around Baslieux-sous-Châtillon, in the Champagne region. The vineyards, covering just over five hectares, are rooted in marly, clay and sandy soils. This specific geological composition imparts a distinct savoury note to the wine. Eric Taillet has managed the plots since 1995 with a respectful agricultural philosophy. The agronomic characteristics of the parcels translate into a dry and vertical sip, outlining a clear expression of the terroir of origin.
How is it produced
The process follows the Traditional Method and is characterised by a complete absence of filtration. A distinctive technical element is the use of the Solera system in partially filled barrels, aimed at preserving aromatic continuity and enhancing structural complexity. The wine then undergoes 60 months of ageing on the lees, which is essential for enriching its bouquet. The vineyard covers 5.70 hectares divided into 6 municipalities around Baslieux sous Chatillon. A charming location in the heart of the great "valley de la Marne" where the Pinot Meunier reigns supreme. There are also Chardonnay and Pinot Noir used for some Cuvée.
