Soil composition Well-drained calcareous soils at medium altitude with perfect exposures from which the grapes can draw their richness: Mediterranean climate during the day and Alpine coolness in the evening, considerable temperature range.
Fermentation temperature 20 °C
Wine making The three grape varieties are vinified separately and the cuvée is made in spring. The grapes are softly pressed, while only the Gewürztraminer grapes undergo a 6-hour maceration on the skins before processing. The must undergoes static clarification and is then fermented in steel tanks at a controlled temperature of 20 °C.
Aging The wine then matures for several months on its lees in stainless steel containers.
