Elena Walch Alto Adige Pinot Bianco is a still white wine made exclusively from Pinot Bianco grapes, representing the renowned Alto Adige denomination. Where it comes from
This Pinot Bianco originates in Trentino Alto Adige, in a wine-growing area distinguished by steeply sloping vineyards. The microclimate creates an ideal synergy between the freshness of the hills up to 900 metres above sea level and the more temperate areas at an average altitude of 250 metres. The vines grow on light soils with typical calcareous and porphyritic textures, fundamental geological features that impart the wine with its marked mineral character. The interaction between the mountain altitudes and the nature of the soil is reflected in a precise flavour profile, supported by a clear aromatic structure closely linked to the territory.
How it is produced
The production process begins with a rigorous manual harvest, accompanied by careful selection of the bunches. The Elena Walch winery proceeds with gentle pressing and subsequent static clarification of the must, key steps to preserve the quality of the raw material. Fermentation takes place in stainless steel tanks at a controlled temperature of 20°C, a technique necessary to enhance the original aromatic profile. Finally, the wine matures for several months in contact with the lees, still in steel, a choice that consolidates the structure and imparts a pleasant sense of elegance on the palate.
