Description
What type of spirit it is
Don Papa Masskara by Don Papa Rum is a spiced rum from the Philippines, made from the distillation of high-quality sugar cane molasses. Its sensory profile stands out for a smooth, fruity base, enriched by a careful infusion of calamansi, honey, and native chilli. With a light amber colour, it reveals a bouquet of citrus and vanilla with floral notes, while on the palate it is velvety, with sweetness balanced by well-judged spiciness. The finish offers a persistent warmth, supported by a lively spicy note that makes the drink dynamic, ideal to enjoy neat or paired with spicy dishes.
Where it comes from
This spirit originates from the island of Negros in the Philippines, a region renowned for its exceptional pedoclimatic conditions. The area is distinguished by its fertile volcanic soil, ideal for growing rich, concentrated sugar cane. The island's tropical climate accelerates the interaction between the liquid and the wood of the barrels during maturation, giving the rum remarkable structural roundness. The name Don Papa Masskara is inspired by the famous Bacolod festival, reflecting the energy and vibrant character of its homeland in every sip.
How it is produced
Production begins with the fermentation of local molasses, followed by distillation in small batches using copper stills. The rum then matures for 7 years in American oak barrels, a crucial stage for acquiring depth and structure. Its aromatic identity is defined by the addition of selected ingredients: calamansi (a small local citrus fruit), honey from the Kanlaon forest, and Siling Labuyo chilli. This artisanal process creates a spirit with an almost creamy texture, excellent to enjoy neat, on the rocks, or as a base for cocktails with a bold personality.
