Baroko by Don Papa Rum is a Filipino rum obtained from the distillation in stills and barrel ageing of the prized Black Gold molasses. This spirit stands out for its rich profile and pronounced smoothness. On the nose, it reveals intense aromas of vanilla, candied tropical fruit and honey, while on the palate it offers a creamy texture, characterised by notes of ripe fruit and sweet spices. The finish is persistent, enriched by nuances of toasted oak and a delicate touch of cocoa, ideal for sipping neat or enhancing refined cocktails.

Where it comes from

This spirit is produced in the Philippines, on the island of Negros, a region renowned for the cultivation of high-quality sugar cane. Its aromatic molasses, which defines its identity, comes from these plantations. The tropical climate and ageing at the foot of Mount Kanlaon encourage the development of a rounded and fruity profile. The brand name celebrates Papa Isio, a key historical figure for the Philippine region, emphasising the unbreakable bond with its area of origin.

How it is produced

The production process involves distillation in copper pot stills, followed by seven years of ageing in American oak barrels previously used for Bourbon, characterised by a pronounced toasting. This slow tropical maturation shapes the structure of the spirit, imparting hints of caramel, vanilla and spiced wood. The technique used delivers a sip with a smooth consistency, capable of combining aromatic depth with a pleasant persistence.

Produced on the island of Negros, at the foot of Mount Kanlaon in the mythical Sugarlandia, Don Papa Baroko pays tribute to the revolutionary hero Papa Isio. The Bleeding Heart Rum Company, founded by Stephen Carroll, created this fine blend to highlight the essence of true Filipino rum. Exceptional attention to detail is evident in the design by Stranger & Stranger, featuring a label printed in Italy, a French glass bottle, and a Portuguese cork stopper. The slow maturation in the tropical climate thus shapes an authentic exotic masterpiece.
