SÈNTATE Recioto della Valpolicella Spumante Dolce by Domini Veneti is a Venetian sparkling red wine born from a careful blend of Corvina, Corvinone and Rondinella grapes subjected to the drying process. On the nose, it expresses an intense fruity aroma with fresh notes of raspberry, black cherry and delicate hints of violet. On the palate, the natural sweetness is expertly balanced by a lively effervescence with a fine perlage, which provides immediate freshness. The tasting concludes with a distinct finish of cherry jam and raisins, perfect for accompanying dry pastries.
Where it comes from
This sparkling wine is born in the heart of the Recioto della Valpolicella zone, in the Veronese Classica area. The rows grow on striking dry-stone terraces located between 120 and 250 metres above sea level, with optimal south-easterly exposure. The soils, characterised by alluvial debris, favour a particularly clear aromatic profile. Training follows the Veronese pergoletta system, respecting the specificities of the territory to obtain bunches with even and concentrated ripening.
How it is produced
After a rigorous manual selection of the bunches, the grapes rest in the drying room for about 120 days. In winter, destemming is carried out, followed by 20 days of maceration with punching down and malolactic fermentation. After an initial six-month ageing in steel, the sparkling wine production takes place via the long Charmat method, which requires a stay of six months on the lees. This delicate stage integrates the aromas and ensures an elegant structure, characterised by a fine and persistent mousse.
