What kind of wine is it
The Recioto della Valpolicella Classico by Domìni Veneti is a sweet red passito wine that expresses the authentic character of the Veronese region. Made from a blend of Corvina, Corvinone and Rondinella, it boasts a rounded and concentrated style. On the nose, it reveals clear hints of raspberry, black cherry and plum, combined with intense notes of stewed fruit. On the palate, it is enveloped by soft and velvety tannins, revealing a dense and complex structure. The natural residual sweetness accompanies a creamy sip, fading into a persistent finish with elegant notes of dried fruit.
Where does it come from
This historic ancestor of Amarone originates in Negrar, in the heart of the Valpolicella Classica. The vineyards, trained using the Veronese pergola system, benefit from a south-east exposure at altitudes between one hundred and twenty and two hundred and fifty metres, favouring excellent aromatic definition. The vines grow on varied alluvial debris soils, which give the wine a marked structural complexity. The strictly limited yields support the vocation of a region historically dedicated to the production of intense and enveloping reds.
How is it produced
The process begins at the end of September with a rigorous manual selection of the grapes. The bunches rest in the drying room for over one hundred days, naturally concentrating sugars and aromas. In January, destemming and crushing take place, followed by controlled fermentation and a twenty-day maceration with frequent manual punch-downs. After malolactic fermentation, the wine undergoes six months of ageing in stainless steel, completed by a period of bottle ageing. This technique preserves the purity of the fruit and the characteristic creamy texture of the sip.
