Description
What kind of wine it is
Cotes du Jura Chardonnay Reculée is a structured white wine with great character. In the glass, it displays a golden yellow colour, which heralds clear and enveloping fruity aromas. On the palate, Chardonnay reveals an excellent texture: the sip is broad, rounded and pleasantly savoury. Its pronounced freshness makes it an ideal companion for first courses and pasta or fish dishes. Thanks to its structure, it also pairs perfectly with white meats, poultry and a refined selection of cheeses, ensuring impeccable balance.
Where it comes from
This wine originates in France, in the renowned Côtes du Jura area. Domaine Pignier cultivates its vineyards on the picturesque slopes of Montaigu, where the hills impart a deep intensity of flavour to the grapes. The estate operates according to the principles of biodynamic agriculture, ensuring the utmost respect for the soil and ecosystem. The connection with the hilly landscape is clearly evident in the glass, offering an authentic and harmonious expression of the terroir of origin.
How it is produced
Production follows the strict standards of Demeter certification. Domaine Pignier adopts the ouillé vinification technique, which involves keeping the containers always full to avoid oxidation and preserve the purity of the fruit. Ageing continues for twelve months in oak barrels, within a historic cellar dating back seven centuries. The passage in wood smooths the structure without overpowering the natural characteristics of the grape variety, ensuring balanced development and remarkable longevity.
