Description
What kind of wine it is
Domaine Pattes Loup Chablis Vent d’Ange is an organic white wine that precisely expresses the qualities of Chardonnay in Burgundy. The bouquet opens with citrus and apricot notes, enriched by floral hints, vegetal nuances and distinct iodised touches. On the palate, it is full, intense and structured, driven by lively acidity that extends the sip towards a persistent mineral finish. Served chilled, it pairs harmoniously with shellfish, lean fish, cheeses, white meats and vegetarian dishes.
Where it comes from
This wine is produced in Courgis, in the renowned Chablis region, under the guidance of Thomas Pico for Domaine Pattes Loup. The estate follows a strict sustainable approach, backed by organic certification that demonstrates a deep respect for the vineyard ecosystem. The care for the environment and the unique characteristics of Burgundy's soil are directly reflected in the glass, allowing the terroir to express itself through a distinctive freshness and a well-defined structure.
How it is produced
The winemaking process begins with a completely natural fermentation, relying exclusively on the action of indigenous yeasts. Maturation lasts for thirty-six months, alternating between stainless steel tanks and large oak barrels, with wood used only during the first year. To preserve the organoleptic complexity and purity of the wine, it is produced without fining or filtration, offering a profound, vibrant white with great mineral tension.
History and Curiosities
The Chablis Vent d’Ange 2022 originates in Courgis, where Thomas Pico manages Domaine Pattes Loup following strict organic farming certified by ECOCERT. The expression of the Burgundian terroir is revealed through natural fermentation and 36 months of ageing between stainless steel and oak barrels. Authentic and pure, this wine undergoes neither fining nor filtration, with minimal use of sulphites to enhance the original essence of its land.

My passion for the profession of winegrower, my curiosity and my desire to respect the environment and the health of my family and friends were determining factors in my decision. The organic cultivation of my vines became an obvious choice.
In 2004, I returned to the family estate of Bois d'Yver and took over 8 hectares which I converted to organic farming (ECOCERT). I then created my own estate, the "Pattes Loup" estate.
In 2009, I obtained my certification in Organic Agriculture. (Thomas Pico) Read more
