Description
What kind of wine it is
Domaine Pattes Loup Premier Cru Cote Jouan is an organic still white wine that showcases pure Chardonnay. In the glass, it displays a straw yellow colour with bright golden highlights, while the nose reveals clear fruity aromas. On the palate, it is intense and structured, driven by a deep savouriness. Its flavour profile makes it ideal to pair with lean fish and shellfish. The harmony of the sip perfectly enhances vegetarian dishes and white meats, such as poultry, and it also pairs excellently with aged cheeses at the end of a meal.
Where it comes from
This wine comes from France, in the heart of Burgundy, and is produced in the prestigious Chablis Premier Cru appellation, an area renowned for its exceptional soils. The grapes are grown specifically in the Cote Jouan site, which imparts great aromatic precision. The wine is produced by Domaine Pattes Loup, an estate rooted in the family property of Bois d’Yver and led by Thomas Pico. The entire management follows the principles of sustainable viticulture, with a strong commitment to environmental protection to faithfully reflect the authentic identity of its place of origin in the glass.
How it is produced
The production of Domaine Pattes Loup Premier Cru Cote Jouan is based on a deep respect for the agricultural ecosystem. All the grapes are grown using natural methods, a commitment validated by the ECOCERT organic certification obtained by the estate. The winemaking process aims to preserve the quality of the raw material, creating a still white wine with a clear varietal expression. The meticulous practices adopted by Thomas Pico at every stage ensure the development of an intense structure, guaranteeing a clarity of flavour that enhances the savoury character of the fruit.

My passion for the profession of winegrower, my curiosity and my desire to respect the environment and the health of my family and friends were determining factors in my decision. The organic cultivation of my vines became an obvious choice.
In 2004, I returned to the family estate of Bois d'Yver and took over 8 hectares which I converted to organic farming (ECOCERT). I then created my own estate, the "Pattes Loup" estate.
In 2009, I obtained my certification in Organic Agriculture. (Thomas Pico) Read more
