Chablis from Domaine Michaut Frères is a still, dry white wine that authentically expresses Chardonnay grown in Burgundy. Where it comes from

The grapes are grown in Beine, in the heart of Chablis, an area in northern Burgundy crossed by the Serein river. This region is distinguished by its Kimmeridgian limestone marl soils, enriched with small fossilised oyster shells. This geological formation gives the wine a pronounced and distinctive savouriness. The northern climate also encourages a gradual ripening of the grapes, allowing the Chardonnay to develop a clear mineral expression while preserving the natural vibrancy of the fruit.

How it is produced

The Domaine Michaut Frères winery vinifies this white with great attention to the purity of its aromas. Fermentation takes place in stainless steel tanks, a deliberate choice to preserve the freshness and aromatic definition of the must. Afterwards, the wine rests for a short period on fine lees, a crucial step that brings harmony to the palate without altering the dry character of the sip. To best appreciate every nuance, it is recommended to serve at 10–12 °C.
