Domaine Fourrey Chablis Premier Cru Côte de Léchet is a still white wine that embodies the elegance of Chardonnay. To the eye, it presents a pale straw yellow colour with delicate greenish highlights, whilst on the nose it reveals a deep bouquet, characterised by notes of white flowers, lemon zest, peach and quince. The palate is dense and precise, supported by a crisp acidity well-integrated into a creamy texture, where hints of green apple and grapefruit give way to nuances of pineapple and lychee, leading towards a long and savoury finish. It is perfect when paired with oysters, shellfish-based dishes, baked turbot and goat cheeses.

Where it comes from

This white wine originates from Burgundy, in the heart of Chablis, from the vineyards of the Côte de Léchet. The identity of the territory is shaped by the famous Kimmeridgian soils, composed of limestone and fossilised sea shells. This particular geology gives the wine a distinct saline minerality, which recalls hints of flint and limestone dust. Thanks to the characteristics of this Premier Cru, the structure is taut and luminous, possessing an excellent ageing potential that allows the wine to evolve with elegance in the cellar for about a decade.

How it is produced

The winemaking follows an artisanal approach overseen by Domaine Fourrey. The grapes are harvested from old vines, capable of drawing an extraordinary aromatic concentration from the soil. The production process aims to preserve freshness and varietal purity. The result is an authentic interpretation of Chablis, capable of balancing a vibrant austerity with generous fruit, faithfully reflecting the prestige of its own terroir.

  • Hectares: 25
Domaine Forrey is a family‑run estate located in the heart of the Chablis vineyard area, in Milly, a hamlet of Chablis just two kilometres away. The estate covers 25 hectares of vines and carries a legacy spanning four generations, passed down from father to son.

Since 1992, I, Jean‑Luc Fourrey, have been managing the Domaine. I studied at the Lycée Viticole in Beaune and hold a Higher Technician Diploma in Viticulture and Oenology. Today, I share this journey with my family — I am married and the father of Emile, born in 2012.

The daily work at the estate is carried out with the support of a team of seven collaborators: a sales assistant, two tractor drivers, one cellar‑and‑vineyard worker, and three vineyard workers. A group made up of three women and four men, where I encourage versatility and the continuous development of individual skills.

Our vineyards are mainly located in Milly — on my father’s side — and in Fleys — on my mother’s side — spread across both banks of the Serein River, at the very heart of the Chablis region.
