Description
What type of wine it is
The Vin Jaune from Domaine de la Renardière is an organic white wine produced exclusively from Savagnin grapes in the renowned Arbois-Pupillin appellation. In the glass, it presents a fascinating golden yellow colour, introducing an aromatic profile dominated by hints of dried fruit and spicy notes. On the palate, it is rich and elegant, characterised by an evolved structure and an extremely persistent finish, typical of its oxidative style. This complex and generous wine pairs ideally with mature cheeses, walnuts, mushroom-based dishes, and refined fish or white meat preparations.
Where it comes from
This Vin Jaune originates in the heart of the French Jura, specifically in the prestigious vineyards of the commune of Pupillin, within the Arbois-Pupillin area. The region is historically famous for its extraordinary aptitude for producing white wines of great longevity and distinct aromatic intensity. Domaine de la Renardière manages its vineyards strictly following the principles of organic farming, to preserve the ecosystem and transfer the pure expression of the local terroir, characterised by unique soils and microclimates, intact to the glass.
How it is produced
The vinification of this nectar faithfully follows the strict local tradition, with an exceptional ageing process that lasts for six years and three months. The process takes place in unfilled barrels, without ever topping up, thus allowing the spontaneous formation of a veil of yeast (sous voile) on the surface of the wine. It is precisely this long and patient oxidative-style ageing that gives the wine its extraordinary gustatory and olfactory complexity.
