Pessac Léognan Grand Cru Classé de Graves still white, 13.5% ABV, produced by Domaine de Chevalier. Blend: 70% Sauvignon, 30% Semillon. 0.75L bottle, 2016 vintage. A white wine that embodies Bordeaux excellence, produced by a historic domaine with a history dating back to the 19th century. Intense, pulpy, intense, fresh, and complex nose. Aromas of grapefruit, orange, peach, and mango blend with balsamic (pine) and mineral (quartz, flint) notes. The entire Chevalier terroir is revealed in this magnificent nose. “Chevalier’s history is an integral part of its identity... The true birth of the estate dates back to the second half of the 19th century. Until not so long ago, the forest took up most of the western part of the Graves, where we are located. How things have changed since then!

Archives from the 17th century show us that the small Domaine de Chivaley included “houses, outbuildings, gardens, grounds, vines, woods, and meadows.” The name "Chivaley", (meaning "knight" in Gascon) is believed to be linked, for an unknown reason, to the presence of the very old pilgrim trail to Santiago de Compostela which still borders the estate.

The term domaine, later replaced by château, originally had a wider meaning that has since disappeared. It referred to an ensemble, as at Chivaley, formed by a family residence and agricultural estate in which viticulture coexisted with other crops and breeding...”

Harvest Sauvignon: 10 to 25 September; Semillon: 15 to 30 September. ed by hand, in small crates. The grapes are carefully selected in the vineyard, before and after destemming.
Wine making Three vats (stainless steel, tulip concrete and wood), to optimise the selection of the plots, perfect the extraction and refine the blend.
