What kind of wine is it
The Champagne Grand Cru Blanc de Blancs Reserve Extra Brut by De Sousa is the pure expression of Chardonnay grown in the Côte des Blancs. Distinguished by a golden colour with green highlights and a fine perlage, it is crafted according to the principles of the Traditional Method. On the nose, it releases aromas of broom, tropical fruits, roasted coffee, eucalyptus and dried fruit. On the palate, it is rounded, combining a pronounced mineral tension with delicate hints of honey, before finishing with a long and savoury finish of great freshness.
Where does it come from
This Champagne originates from the terroirs of the Côte des Blancs, from vines located in the Grand Crus of Avize, Oger, Cramant, Chouilly and Le Mesnil-sur-Oger. The vines, with an average age of around forty-five years, are cultivated following the principles of organic farming. The vitality of the soil is preserved by working with horses, avoiding the use of tractors. This respectful approach enhances the identity of the land, delivering in the glass the authentic mineral freshness that deeply characterises this wine-growing area.
How is it produced
The cuvée is created from a careful blend enriched by a significant proportion of reserve wines, chosen to provide depth and stylistic continuity. The first fermentation takes place, where possible, with indigenous yeasts and is carried out in steel tanks and oak barrels. The subsequent prise de mousse, conducted according to the Traditional Method, ensures fine and persistent bubbles. Finally, the Extra Brut dosage balances the natural acidic tension, offering a harmonious and dry tasting experience that enhances the great purity of the sip.

This is a fine and enlightened winemaker, but also a very talented winemaker, so today its about 75,000 bottles produced are currently literally fought over by enthusiasts. The De Sousa family owns 11 hectares subdivided into 42 parcels, planted with 8,000 plants / ha and with an average age of 45 years. Since 1989, Erick has started converting vines to AB (Agriculture Biologique), ending in 1999, and using the horse instead of tractors. It is, in short, a true "bio", but it is far from the slogans and, above all, it is with such skill that its champagne are neither rustic nor improbable.
In the cellar, the grapes are fermented partly in steel and partly in barrique, using only indigenous yeasts when possible. De Sousa produces an additional 30,000 bottles with the most accessible Zoémie De Sousa brand. Read more
