What kind of wine it is
Kaplja, produced by Damijan Podversic, is a captivating macerated white wine that fully expresses the identity of Collio. This renowned orange wine is born from a harmonious blend that combines the elegance of Chardonnay, the structure of Friulano, and the aromatic richness of Malvasia. In the glass, it presents a slightly opalescent antique golden yellow hue, heralding a full and smooth sip. The flavour profile is warm and enveloping, characterised by great balance and a long savoury persistence that defines its profound character. The presence of any natural sediments is an intrinsic feature that protects and preserves the wine's organoleptic qualities over time.
Where it comes from
The grapes destined for this blend come from the hills of Collio, a historic wine-growing area in the heart of Friuli-Venezia Giulia. The rows of vines stretch between one hundred and ten and one hundred and forty metres above sea level, benefiting from optimal south and south-west exposures that ensure perfect ripening of the bunches. The secret of this complexity lies in the ponca soils, rocky formations composed of alternating marl and sandstone. This unique geological structure, combined with the warm and breezy climate, gives the fruit extraordinary extractive richness and imparts a pronounced structural minerality that supports the wine's long evolution.
How it is produced
The vinification process follows a meticulous approach, starting with a long skin fermentation in large truncated conical oak vats, lasting from sixty to ninety days. After this maceration period, the wine matures patiently in oak barrels to complete its olfactory architecture, then rests for a further period of refinement. The result is a dense and multifaceted aromatic spectrum, where penetrating notes of beeswax, almond, and chestnut honey stand out. The bouquet gradually opens to hints of bergamot, pear, and black tea, finally closing on subtle floral notes of linden and alfalfa.

Produced on ponca soils in a warm year characterised by a touch of botrytis, this gem from Collio is the result of skilful and lengthy vinification on the skins. The essence of the wine is preserved by its natural sediments in the bottle, which ensure a savoury, warm and enveloping persistence, confirmed by the prestigious 95 points from Vinous and 5 Grappoli from Bibenda.

Today on these lands we have the most important vinyards, six hectares planted with ribolla gialla, malvasia, friulano, merlot e cabernet sauvignon.
We have another half hectare at San Floriano, planted with chardonnay, which was part of my grandfather’s holding. We have a further two hectares rented at Gradiscutta with chardonnay, malvasia e friulano. For the past twenty years we’ve had at Piedimonte another one and half hectares with friulano, chardonnay e malvasia. Read more
