The Valpolicella by Corte Giara is a still red wine that stands out for its pleasantness. Made from a blend of Corvina Veronese and Rondinella, it displays a lively ruby colour. Where it comes from
The grapes are grown in the hilly area north-east of Verona, specifically in Fumane, at the heart of Valpolicella. The vineyards are situated at an altitude between 180 and 250 metres, with a south-east exposure that ensures a mild and breezy climate, positively influenced by the proximity of Lake Garda. The clay and limestone soils provide the ideal environment for the vines, which are trained using the espalier and pergola systems. These soil and climate conditions enhance the varietal freshness and encourage the development of clear aromatic profiles.
How it is produced
The manual harvest takes place in September and involves a meticulous selection of the bunches. After destemming, the grapes undergo gentle pressing before starting fermentation in stainless steel tanks at a controlled temperature, a stage accompanied by regular pumping over to optimally extract colour. This is followed by malolactic fermentation. Ageing continues in steel for about three months, preserving the original fragrance of the fruit, and concludes with a targeted rest in the bottle to stabilise the aromatic profile.
