What kind of wine it is
Conzal Trentino Nosiola by Cavit is a still white wine, an authentic expression of the Trentino region. Made from Nosiola grapes, it appears a pale straw yellow with delicate greenish highlights. On the nose, it offers a floral bouquet of white flowers, accompanied by fragrant notes of apricot and green apple. On the palate, it stands out for its dry and fresh flavour, enhanced by a pleasant savouriness that makes it extremely easy to drink. It is the ideal companion for an aperitif or to accompany light fish dishes and delicate cured meats.
Where it comes from
The grapes are grown on the slopes of the Calavino Mountains, along a ridge shaped long ago by glacial action. The vineyards are cultivated using the typical Trentino pergola system on terraces supported by historic dry-stone walls. The deep soil, of calcareous-marl origin, gives the wine a balanced and dry profile. Nosiola prefers a constantly ventilated climate, finding in this particular mountain area the perfect environment to express its characteristic aromas and natural elegance.
How it is produced
The production process begins with a careful selection of the bunches and a light maceration in the press, followed by gentle pressing. Fermentation in stainless steel, carried out at controlled temperatures, aims to preserve the integrity of the grape's typical fruity and floral bouquet. This is followed by maturation in steel for about six months, which helps to stabilise the wine's structure while maintaining its vibrancy, before cold bottling to preserve all its aromatic freshness.
History and Curiosities
The Nosiola is the only native white grape variety of Trentino, with historical roots dating back to the chronicles of the Council of Trent. Its charming name evokes the delicate hazelnut notes that characterise its flavour and the colour of its shoots. As this variety requires a constantly breezy climate, its production is limited and precious. It is precisely from this exclusivity that the dialect name Conzàl originates, a term referring to the traditional wine tub, chosen to pay tribute to the rarity and authenticity of this wine.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.
Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.
Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.
