Description

Cultivated since the 16th century by the Benedictine Fathers in Gries di Bolzano, the Lagrein grape variety is also well established in Trentino, to the point of authorising the opinion that its name may derive from Vallagarina. It is an indigenous grape variety with the noblest quality characteristics. It prefers warm, sheltered environments, although its late budding prevents it from being damaged by spring frost; in spring it is sensitive to large temperature swings and heavy rainfall, which cause poor fruit set and low yields. In return, the grapes yield a wine of remarkable concentration and complexity.

Pronounced notes of woodland fruits (raspberry, redcurrant and blackberry) and vanilla. The notable olfactory complexity is also found in the flavour, in all its fullness.

Cavit is a company deeply rooted in the region to which it belongs: Trentino. A small area in the north-east of Italy where the vine, olive tree and Mediterranean-type vegetation live side by side with spruces and larches of the Alpine flora. A land of ancient traditions and culture, where the presence of man, with his villages, castles and cultivated terraces blends in harmoniously with the majestic Alpine landscapes.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.

Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.

Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.

Climate These areas enjoy a sub type of continental climate with cold winters, often with snow, and hot summers, but with good differences between day and night temperatures. The Vallagarina also benefits from the effect of the "Ora del Garda", a pleasant breeze that blows up from Lake Garda during the afternoon.
Soil composition The vineyards in the Adige valley are sited on hills featuring glacial or morainal terraces of brown, medium-depth, easy draining soils with a gravelly or stony matrix. In Vallagarina the vineyards are located on fans formed by the sediment from ancient mountain streams. The well-structured, easy draining limestone soils contain plenty of pebbles and a fair amount of clay.

Wine making At the end of the alcohol fermentation period the wine is transferred into barriques where malolactic fermentation takes place, at the end of which it is aged for 12 4 months.
