In so doing, we have help enhance the reputation of the wines of the Oltrepo Pavese, the area to the south of Pavia.
Carlo Giorgi di Vistarino introduced the pinot nero grape to the Oltrepo Pavese between the end of the 19th century and the beginning of the 20th century, going on to win awards in both London and Paris for the sparkling wines thus produced. His work was taken further by Ottaviano and Carlo, and is today in the hands of Ottavia Giorgi di Vistarino.

| Harvest | Manual, first half of September. Selection of the grapes during manual harvesting in 20Kg baskets, rest overnight in cell fridge before pressing, in small press without use of pump. |
| Wine making | Cold maceration (10°C) for 48 hours, after alcoholic fermentation for 10 days. Then a part of the wine refined in oak and the rest stay in tank waiting for final blending. |
| Aging | The wine is partly aged in stainless steel and partly in used barriques, until bottling, which takes place 10 months after the harvest. |
