Where does it come from
The grapes that make up this wine grow in the renowned Franciacorta area, in the province of Brescia. The vineyards are trained using the Guyot system and the vines sink their roots into a stony and moderately calcareous soil, which ensures optimal drainage. The ventilated position of the plots allows the bunches to reach a consistent and regular ripeness. This specific combination of environmental and pedoclimatic factors is essential to preserve the wine's aromatic freshness and natural liveliness.
How is it produced
The harvest takes place between the end of August and the beginning of September. In the winery, the process begins with a brief cold maceration, followed by gentle pressing of the grapes. The first fermentation takes place in stainless steel tanks, accompanied by a partially completed malolactic fermentation. The base wine rests for seven months between steel and barrels. The secondary fermentation in the bottle, as required by the Traditional Method, is followed by a slow ageing on the lees that lasts from twenty-four to thirty months. At the end of this phase, disgorgement and a final rest in the cellar give the wine its definitive balance.
