The grapes, harvested in the vineyards of Adro, combine the freshness of the Sottomonte hill with the grace of the Erbusco slopes, growing on calcareous soils and eastern terraces that give the wine an impeccable structure, enriched by spicy and ripe fruit notes. Crafted according to the rigorous Metodo Classico, the wine undergoes soft pressing, a first fermentation between stainless steel and barrique for seven months, and a slow secondary fermentation in the bottle with a long aging on the lees of thirty-to-thirty-six months, the secret of its unmistakable creaminess. Upon opening, this prestigious cuvée reveals a fine and persistent perlage, releasing clean aromas of hawthorn, rennet apple, and bread crust, nuanced by balsamic notes and light toast; on the palate, it proves soft, fresh, and mineral, ideal for enhancing raw seafood and shellfish. Contadi Castaldi is one of the most famous wineries in Franciacorta that has managed to create a perfect blend of modernity, experimentation, and excellence. It was founded in 1991 by Vittorio Moretti, already founder of the Bellavista winery, in Adro: there the well-known entrepreneur transformed an old furnace into a sparkling wine house. The long galleries and large spaces once used for baking bricks were perfect for aging sparkling wines, quickly becoming one of the most innovative and vital centers in the area.
