Description

Still red Chianti Classico wine, 14% ABV, produced by Colombaio di Cencio. 100% Sangiovese, 2020 vintage. A Chianti Classico Gran Selezione made in Gaiole in Chianti, Tuscany, from organically farmed vineyards. The grapes are hand-harvested and vinified with a minimum 50% whole-cluster fermentation in temperature-controlled stainless steel tanks. Aged for approximately 24 months in used 500-liter tonneaux and large barrels, followed by a further 6 months in bottle. Intense, with red fruits and spices, mineral notes and well-toasted, balanced wood. Ruby red in color, deep but brilliant. On the palate, its beautiful structure is immediately apparent: harmonious, almost sweet, with good fruitiness and a very persistent finish.

Colombaio di Cencio was founded in 1993 by Werner Ernest Wilhelm, a German entrepreneur who was inspired by the beauty of the hills surrounding Gaiole in Chianti (Tuscany) and decided to establish a farm.

As a result, he transformed a rural cottage surrounded by woods into a winery where tradition and modernity coexist peacefully.

The vineyards are divided into three distinct areas within the municipality of Gaiole in Chianti: Cornia, Montelodoli, and Vinci.

The differences between these areas are due to the pedoclimatic characteristics of the areas as well as the type of grapes grown.

Soil composition The vineyard from which this wine originates is rich in skeleton with a marked clay component, characteristics that give the grapes the right balance of acidity and tannic richness.

Wine making After careful selection in the vineyard during harvesting, carried out exclusively by hand, the grapes are brought to the cellar in small crates. The vinification protocol involves fermentation with at least 50% whole cluster in temperature-controlled stainless steel tanks. Almost at the end of alcoholic fermentation, the grapes are drawn off and pressed to allow fermentation to finish.
