How it is produced
Production begins with the fermentation of fresh cane juice, which is subsequently distilled in traditional column stills. The spirit undergoes a careful maturation phase in a precise combination of new Limousin oak barriques and toasted ex-bourbon barrels. This specific wood treatment develops a rich golden amber colour and introduces layers of warm caramel and roasted coffee. At 40% vol, the resulting spirit maintains a masterful balance between sweet and spicy components.

Distilled exclusively from pure sugarcane juice using a low-yield method to ensure premium quality, it is patiently aged for at least four years in new Limousin oak and toasted ex-bourbon casks. This refined maturation process creates a remarkably sophisticated Rhum Vieux Agricole VSOP, which has been awarded prestigious international gold medals in recognition of its rich heritage, outstanding craftsmanship, and authentic Caribbean character.

Born in the late nineteenth century, in 1887 for the sake of precision, the company took over by the hands of Homere Clément, doctor and mayor of Le François, who after buying the prestigious 43 hectare sugar plantation of Domaine de L ' Acajou began to produce Rhum Agricole directly from sugarcane juice, obtaining a distillate characterized by a contemporary and pure style. In the wake of such production, Homère Clément chose to create a real distillery, in particular to meet the great demand for alcohol during the First World War.
After the death of Homère Clément, his son, Charles Clément, took over the management of the business, perfecting the production methods and starting to export Martinique Rhum Agricole for the first time abroad. At Charles Clément, they later moved to the children, while at the end of the last century, in 1996, the distillery was purchased by the Hayot family, which chose to continue with the company philosophy of previous management. This is how the production of Rhum Habitation Clément is still in existence, following the most pure agricultural traditions, as well as the rules of a secret recipe that has been passed from generation to generation for centuries.
The processing of Rhum Vieux Agricole is subject to rigid controls, with which the sugar cane is scrupulously selected and that the stages of distillation, aging and bottling are monitored.
