Tintilia del Molise Settevigne is a still organic red wine produced by Claudio Cipressi, a faithful expression of Tintilia. In the glass, it displays a red colour enriched with elegant garnet reflections. On the nose, it reveals a clear aromatic profile, dominated by balsamic and spicy notes. The palate is soft, rounded and enveloping. These characteristics make it perfect for accompanying grilled meats, pork-based dishes and medium-aged cheeses.

Where it comes from

This label originates in San Felice del Molise, at about 520 metres above sea level, from organic and sustainable agriculture. The Tintilia vines are cultivated using the spur-pruned cordon method, limiting yields to maximise aromatic concentration. Claudio Cipressi's meticulous approach fully enhances this native grape variety, an authentic and profound expression of its territory of origin.

How it is produced

Production begins in October with a manual harvest and careful selection of the bunches. In the winery, the must undergoes maceration for at least twelve days at a controlled temperature to extract colour and aromas in a balanced way. The structure of the wine is defined through a long rest of thirty-six months in steel tanks, followed by six months of bottle ageing. This production choice ensures harmony and a marked predisposition to ageing.

The native grape vines he grows now include: 12 Molise Tintilia, 1,5 Montepulciano, about 1 Falanghina and 0.5 Trebbiano.
