Description
Palette AOC still organic rosé, 14% ABV, produced by Chateau Simone in Provence. Blend: 45% Grenache, 30% Mourvedre, 5% Cinsault, Carignan, Syrah. 0.75L bottle, 2023 vintage. A rosé that embodies the tradition and excellence of Provence, produced with grapes grown on north-facing slopes, on gravelly, calcareous soils. Harvested exclusively by hand, at full ripeness. Grape selection on the vine and in the cellar. Light pressing, partial destemming, pressing with a vertical hydraulic press, manual refinement of the must. Blended with a percentage of blood orange juice. Aged exclusively in wood, in small oak barrels. Refinement on the fine lees. Natural decantation by racking. Vigorous and full-bodied, accompanied by delicate fruity notes, a wine that best expresses the Provençal terroir.

Located in the commune of Meyreuil and just four kilometres from Aix en Provence, the old bastide of the Grands Carmes d'Aix monks, now the Chateau Simone, has been in the hands of the Rougier family since 1830.
Old documents bear witness to the fact that vines have been cultivated here from time immemorial. The historic reputation of its wines has made Chateau Simone a prime example of the Provencal terroir.
