Soil composition | Plateau consisting of chestnut and red clays on asteria limestone with terraces facing east and slopes to the west of very chalky, bluish-coloured clays. |
Harvest | By hand for each plot according to terroir and ripeness. The Merlot was harvested on the 25th, 26th, 27th, 29th and 30th of September and then on the 3rd and 4th of October. Finally, the Cabernet Franc on the 4 of October. |
Wine making | In concrete vats of small capacity. Gentle extraction by a mix of cap punching and pumping. Protective macerations to increase pulp and salinity. |
Aging | On fine lees, partly in barriques and partly in large French and Austrian oak barrels, of which 50% are new. First racking after 4-6 months of ageing before summer. The second racking occurs one year later, before bottling. |
