What kind of wine it is
Cesarini Sforza Trento Brut is a sparkling wine that fully expresses the character of Trento. Made from Chardonnay grapes, it is produced using the Traditional Method. In the glass, it displays a brilliant gold colour, enlivened by a fine and persistent perlage. The bouquet combines clear notes of citrus and white flowers with subtle hints of brioche and candyfloss. On the palate, it offers a creamy and fresh sip, supported by lively acidity that prolongs its balance through to the finish.
Where it comes from
The grapes come from highly renowned winegrowing areas among the Avisiane Hills, the Cembra Valley and the Valsugana. The vineyards are situated on slopes facing south and south-east, at an altitude between 350 and 700 metres, an ideal setting for the regular ripening of Chardonnay. The geological composition alternates between deep, loamy-clay soils, rich in dolomitic rock, and well-drained calcareous and porphyritic soils. This territorial diversity results in great aromatic clarity and pronounced structural finesse, enhancing the natural elegance of the grape variety.
How it is produced
The Chardonnay harvest takes place between the end of August and the beginning of September. Production begins with a first fermentation in stainless steel, a technique aimed at preserving the integrity of the primary aromas. The prise de mousse follows the rules of the Traditional Method, with the second fermentation taking place in the bottle. The wine then undergoes a slow ageing on the lees lasting between 24 and 36 months. This long rest enriches the texture and aromatic complexity, giving the glass a dynamic and distinctly fresh profile.
