Benozzo by Cesarini Sartori is a structured red that fully expresses the complexity of Sagrantino. In the glass, it reveals a deep ruby hue with purplish highlights, opening up to intense notes of cherry in spirit, blueberry jam and ripe strawberries. The bouquet evolves towards hints of blood orange and spicy and balsamic nuances that evoke vanilla, cloves, black pepper, leather and tobacco. On the palate, it stands out for its smooth tannins, offering a clean, fresh sip characterised by a pleasant final savouriness.
Where it comes from
This wine with geographical indication Umbria is born in the heart of the region. The vineyards of Cesarini Sartori sink their roots into clay, sandy and lacustrine soils, cultivated using the cordon-trained system. This soil composition gives the wine a vibrant freshness and a well-defined flavour profile, reflecting the authentic Umbrian identity. The natural minerality of the soil imparts a marked gastronomic vocation to the sip, making it the ideal companion for dishes based on beef, lamb and mature cheeses.
How it is produced
The manual harvest is followed by a rigorous selection of the grapes on vibrating tables, aimed at ensuring the absolute integrity of the bunches. In the cellar, after a brief maceration, fermentation takes place in stainless steel tanks to preserve the utmost aromatic purity of the fruit. The ageing process lasts a total of two years and alternates between resting in steel and a period in oak barrels. This process harmonises the spicy and fruity components of the blend, ensuring a balanced and elegant final profile.

Their choice was not random: already in 1312 the urban land register certified the millennial viticultural vocation of the territory , accross the "road" (Signæ) of the ancient Flaminia, where – it is said – there was a host which served a "sweet an flavoured" wine to people travelling from Rome to North Europe.
The winery is surrounded by 30 hectares of vineyards – cultivated with Sagrantino, Sangiovese, Merlot and Cabernet vines – and by several medieval castles, still populated, which draw a unique landscape scenario.
If we were to tell Signæ with just three words we would choose technology, genius and sustainability. Thanks to technology we are able to minimize the use of chemicals both in the vineyards and in the cellar: the result are high quality natural wines, with a minimum quantity of sulphites which do not bother the head or the stomach. Alongside technology, it remains an important manual work: the harvest is manual, as the processing of the soil around the vines and the selection on vibrating tables, first of the bunches and then the berries.
