Description
What kind of wine it is
Cesari Justo Veneto is a still red wine from Veneto, created from a harmonious blend of Corvina and Merlot. Produced by Cesari, it displays a deep red colour with violet highlights. On the nose, it releases intense aromas of cherry, blackcurrant and pear, enriched by elegant hints of black pepper and vanilla. On the palate, it reveals a smooth and velvety structure, balanced by a pleasant freshness. The sip is dry yet enhanced by a slight residual sweetness, offering an essential and immediate profile.
Where it comes from
The vines grow in the province of Verona, in an area moderated by the climate of Lake Garda, which fully enhances the Veneto region. The wine's name combines the English "Just" and the Italian "Giusto", reflecting Cesari's vision: to offer a balanced and straightforward wine. The grapes come from vineyards cultivated according to strict sustainability principles. The result is an extremely versatile red, designed to accompany meals with elegance, maintaining a clear fruity character that complements flavours without ever overpowering them.
How it is produced
Harvesting takes place at the end of September. The grapes undergo a light drying process for twenty days, naturally concentrating the aromas. This is followed by a fifteen-day maceration on the skins for a delicate extraction of colour and body. After malolactic fermentation in steel tanks, maturation takes place in oak barrels and concludes with a short resting period. The care Cesari takes at every stage of production makes this wine suitable even for a vegan diet.
History and Curiosities
Born from a project by Gerardo Cesari, this elegant Veneto IGT blends the English word “Just” and the Italian “Giusto” in its name, offering an essential and immediate experience. The meeting of Corvina and Merlot, harvested at the end of September, is enriched by a light drying of twenty days in crates. This meticulous process, completed by ageing in oak, concentrates its cherry aromas and spicy notes. The result is a red wine with a velvety structure, capable of enveloping the palate with extreme softness.
