What type of wine it is
Cesari's Amarone della Valpolicella Classico Il Bosco is a still red wine from Veneto with a Denominazione di Origine Controllata e Garantita status, boasting a vigorous and deep character. It is obtained from a blend of Corvina Veronese, Corvinone, and Rondinella grapes, through the drying of the grapes and ageing in barrels. To the eye, it presents an intense red colour, enhanced by distinct garnet highlights. On the nose, it releases well-defined aromas of ripe cherry, fruit jam, cocoa, sweet spices, and bitter almond. On the palate, it proves to be warm, enveloping, and characterised by a solid structure, while the elegant profile leads the tasting towards a long and harmonious finish, defining this Amarone della Valpolicella Classico as a wine of extreme precision and balance.
Where it comes from
The grapes come from the historic Il Bosco vineyard, located in San Pietro in Cariano, in the heart of Valpolicella Classica. The vines, over twenty years old, are rooted in hilly alluvial soils, characterised by a balanced presence of clay and sand that gives the wine a natural equilibrium. During the summer, the significant temperature variations between day and night favour a slow and complete ripening of the bunches, concentrating the essential aromatic components. This ideal microclimate, combined with the particular composition of the soil, contributes to creating a wine with an intense character, solid and of great complexity.
How it is produced
Production begins with a careful manual selection of the best bunches, placed with care in crates for the traditional appassimento process in ventilated drying rooms until winter. During this phase, the grapes lose weight, naturally concentrating sugars and aromas. This is followed by cold maceration and fermentation, with malolactic fermentation carried out in steel tanks. Ageing lasts for about three years, two of which are spent in French barriques and large Slavonian oak barrels. A final period of resting in the bottle perfects the harmony of this structured red.
