Cerbaiona Brunello di Montalcino is a still red wine that embodies the pure essence of Sangiovese. An expression of the renowned Brunello di Montalcino area, it stands out for its full and rigorous style. On the nose, it offers a broad aromatic profile, where fruity and floral notes intertwine with clear balsamic and spicy hints. On the palate, a powerful and warm personality emerges, supported by an extremely refined silky texture. The sip highlights a deep structure, delivering a harmonious, taut profile with exemplary expressive clarity.

Where it comes from

This red originates from the hills of Montalcino, in the heart of Tuscany. Produced by Cerbaiona, the wine is the result of a deep connection with the land. The Sangiovese vines, cultivated on steep soils, ensure grapes of great concentration thanks to very low yields. Vineyard work adopts a craft approach aimed at preserving the integrity of the raw material. This constant attention allows for perfect phenolic ripeness, giving the wine a decisive identity, ideal for accompanying dishes based on red meats, game and mature cheeses.

How it is produced

The production process follows traditional red wine vinification. During fermentation, frequent pumping over encourages optimal extraction, completed by a prolonged maceration of about thirty days. Subsequently, the wine matures for two years in oak barrels, a fundamental step for refining the aromas and stabilising the tannic component. The process ends with an adequate period of rest before commercialisation, necessary to harmonise every element. This approach gives the wine excellent ageing potential, ensuring an extraordinary evolution over time.

The house and winery of Diego Molinari is a small and old building, stone made, surrounded by Sangiovese vineyards.
