A Brut Classic Method sparkling white wine produced by Castello Pomino - Frescobaldi, from Tuscany. Pomino DOC, 12.5% ABV. 2019 vintage, 0.75L bottle. A Classic Method sparkling wine made in a hidden gem among the Frescobaldi estates, with vines climbing up to 700 meters. The grapes were harvested by hand in 15kg crates during the coolest hours of the day. On the nose, this Classic Method offers mineral notes and white spring flowers such as hawthorn, followed by hints of acacia honey, pastry, and white-fleshed fruit such as September peach. The finish offers more evolved aromas reminiscent of dried fruit. Straw yellow with golden highlights. The entry into the mouth is clean and crisp, with the effervescence stimulating all the taste buds without being overpowering, but rather promoting the perception of a distinct creaminess. The finish is long and recalls the softness of caramel and the aroma of licorice combined with some toasted notes.

The castle dates back to the 1500s and is well-known for its excellent location. However, the most significant testimony dates back to 1716, when Grand Duke Cosimo III de' Medici identified the four most suitable territories in Tuscany for producing Quality Wines.
The document, considered the forerunner of modern DOCs, lists the Pomino land along with Chianti, Carmignano and Val d'Arno di Sopra.
Since that date, the wines of Castello Pomino have won many awards: they were awarded in 1873 at the Universal Exhibition in Vienna and in 1878 won the Gold Medal at the Paris Expo, the highest international recognition at the time.

| Wine making | Once in the winery, the grapes were subjected to a slow and gentle pressing that allowed the must to be extracted from the heart of the berry. Once the cuvée was obtained, a 12-hour cold clarification was carried out, which allowed for the decisive clarification in creating the qualitative harmony typical of Leonia. Fermentation occurred in stainless steel tanks at a constant, controlled temperature; a part was fermented in wood. |
| Aging | In March, following the harvest, the different cuvées of Chardonnay and Pinot Nero were blended, followed by the addition of liqueur de tirage and re-fermentation in the bottle with subsequent ageing on the lees for at least 32 months. The process finished with riddling and disgorgement, followed by further bottle ageing. |
