Soil composition | The soils are produced by the alteration of calcareous-fossiliferous formations, in particular red flake and biancone. |
Harvest | The harvest takes place in several stages during the last two weeks of September to allow the grapes to ripen optimally. The grapes are harvested by hand and left to dry in the drying room. |
Wine making | The grapes, harvested in boxes, remain in the drying room until December/January. The loss of water, a consequence of the drying period, favours the concentration of all substances in the grapes. Fermentation and maceration take place in small steel vats. |
Aging | This is followed by the final fermentation and maturation in 500 000 litre oak casks, where the new wine will remain for about 18-24 months. The Amarone refines further in the bottle until it reaches optimum maturity. |
