Description
The Brunello Grappa from the Capovilla distillery was born from the inventiveness and skill of master distiller Vittorio Capovilla. The idea was to use Sangiovese pomace from the typical production areas of the famous Brunello di Montalcino wine, and use it to obtain a distillate with a particularly full-bodied and balanced flavor. All the raw materials must be strictly organic. With a highly artisanal technique involving a double passage in copper stills, the Brunello Grappa Capovilla is obtained. In reality, to be able to enjoy it, it requires waiting two to three years for the distillate to rest peacefully in stainless steel tanks. Another unique feature of this grappa is the fact that it has only undergone the process called rest-esterification and not the classic aging. The final step is dilution with the purest water from nearby Monte Grappa (just to stay on topic), which will determine the alcohol content. After much anticipation, it's time to grab a glass (a tall tulip glass, of course), pour the grappa, wait for the warmth of your hand to warm it, and enjoy the full array of aromas released. Capovilla di Brunello grappa is simply unique. It's intended for true connoisseurs and avid enthusiasts who will appreciate the passion and love that Maestro Vittorio has put into creating this product, a symbol of the great tradition of Italian spirits.

Germany and Austria, allowed me to discover the world of distillation which, unlike what was happening in Italy, laid the foundation for a completely different culture.
At that time in our country all had the ambition to distill "something" in the house without having the compenses to do so.
The passion for the world of distillates was born by accident in '74, the year I started to deal with machinery for oenology.
Many trips abroad, particularly Switzerland, Germany and Austria, allowed me to discover the world of distillation which, unlike what was happening in Italy, laid the foundations
