Capovilla Grappa Bassano is a brandy of great value, the fruit of the wisdom of Vittorio Capovilla, considered one of the greatest master distillers on the international scene today. It is no coincidence that the great winemaker Luigi Veronelli called him "The noblest of nobles among distillers." It is a grappa obtained from the Bassano pomace without the addition of any additives or flavorings. The strictly artisanal process respects and enhances the organoleptic qualities of a high-quality raw material and produces a grappa with an authentic flavor. The distillation is carried out with the ancient bain-marie still, the use of which is lost in the mists of time. This is a pot still specifically designed for artisanal distillation: its boiler must be filled manually at the end of each cycle, requiring the constant presence of the master distiller. It's no coincidence that Vittorio Capovilla personally supervises each phase. The pomace is slowly heated to preserve the precious aromatic substances extracted from the grape skins. These reach the distillation column along with the alcohol produced by fermentation and condense in the coil. At this point, the distiller cuts off the "head" and "tail" of the product, expertly selecting the heart that will give life to Grappa Bassano Capovilla, diluted exclusively with pure water from Monte Grappa. A craftsmanship that requires love, patience, and expertise, for a distillate of the highest quality that tells the story of the finest Italian tradition.
Numerous trips abroad, particularly Switzerland,
Germany and Austria, allowed me to discover the world of distillation which, unlike what was happening in Italy, laid the foundation for a completely different culture.
At that time in our country all had the ambition to distill "something" in the house without having the compenses to do so.
The passion for the world of distillates was born by accident in '74, the year I started to deal with machinery for oenology.
Many trips abroad, particularly Switzerland, Germany and Austria, allowed me to discover the world of distillation which, unlike what was happening in Italy, laid the foundations
on a completely different culture.
