Kaltern's Pinot Grigio Soll is a white wine with a crisp profile, an expression of the renowned Alto Adige appellation. Where it comes from
The grapes come from historic low-yield vineyards located in the hilly area of Caldaro, on north-east facing slopes. At an altitude between 250 and 300 metres, the vines take root in limestone clay and gravel soils, essential for the savoury nature of the wine. The significant diurnal temperature range between warm days and cool, breezy nights ensures precise aromatic development. The proximity to the lake mitigates the microclimate, infusing the wine with a vibrant mineral character and excellent gustatory tension.
How it is produced
The process begins with manual selection of the bunches and a delicate soft whole-cluster pressing. Slow fermentation at controlled temperatures takes place in stainless steel tanks, large wooden barrels and tonneaux, favouring clear aromas and structural roundness. This is followed by maturation on the fine lees for five months, a fundamental stage to expand the aromatic profile and palate texture. Careful final filtration results in a dry and balanced profile, fully faithful to its territory of origin.
