How it is produced
After white vinification, the base sparkling wine undergoes a second fermentation in a pressurised tank following the Martinotti-Charmat method. This process defines the Extra Brut dosage and encourages the development of a fine and persistent perlage, resulting in a clean sensory profile with distinct fruity notes. The result is a wine of marked freshness, with an estimated cellar ageing potential of up to five years. To best appreciate its qualities, a serving temperature of 6-8 °C is recommended.
