Description
Still red, Sebino IGT, 13% ABV, produced by Ca' del Bosco in Lombardy. 100% Pinot Noir. 0.75-liter bottle, 2022 vintage. A Pinot Noir that embodies the excellence of the Ca' del Bosco method, a wine born from a careful selection of grapes and meticulous vinification. The grapes come from six Pinot Noir vineyards, with an average age of 35 years, located in the municipalities of Erbusco and Corte Franca. Alcoholic fermentation and maceration lasted 17 days. After racking, the wine, still warm, is racked into small oak barrels, 50% of which are new.

| Harvest | Pinero is the fruit of careful grape selection and skilful vinification conducted in full respect of the Ca' del Bosco Method. The grapes from 6 "chosen" vineyards are freshly hand-picked into small crates, sorted and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "grape spa", a special system of washing and hydromassage of the bunches, using three soaking tubs and a drying system. Next, each bunch is transported over the maceration vat. With destemming, the grapes fall into the vat, from above, by gravity. This eliminates the traditional pumping systems, which cause the skins to break and undesirable herbaceous notes. |
| Wine making | Alcoholic fermentation and maceration were conducted over 17 days, carefully managing temperature and punching-down. Pumpovers were carried out daily, using a pair of elevating tanks into which the wine, tapped from the bottom of the vat, was transferred by gravity. The wine, brought up by the flying tanks, is poured into the vat, at high flow rate, to submerge the 'cap'. Nothing could be more natural and effective to gently extract the colour and tannins. |
| Aging | After racking, the wine, still warm, is decanted into small oak barrels, 50% new, made from selected woods, matured for at least 3 years. Ageing lasted a total of 11 months, at the end of which the wine was bottled naturally by gravity. Thanks to innovative filling systems, the wine is not subjected to oxidative shocks, whisking and further additions of sulphites. Its integrity and wholesomeness are guaranteed. Finally, each packaged bottle is uniquely marked to guarantee traceability. Bottle ageing: average duration 2 years and 6 months. |
