Description
Extra Brut Champagne, produced by Bruno Paillard in the Champagne region of France. A 1.50L Magnum. The initial aromas reveal the citrus fruits of Chardonnay: lime, grapefruit. Then come the aromas of red fruits: currant, raspberry, black cherry, characteristic of Pinot Noir. Allowing it to open further in the glass reveals a connection with slightly candied fruits, such as the exotic ones of Pinot Meunier (pineapple). The attack is lively thanks to a low dosage that respects the wine's authenticity. The nose confirms itself with the initial flavors of citrus, almond, toasted bread... but also of black cherry jelly, followed by black fruits such as cherry, fig, and blackberry. As it evolves, its aeration and warming reveal light flavors of plum and pear. The palate is broad without being heavy, quite long, leaving a very clean finish.

According to Bruno Paillard, a great Champagne is first and foremost a blend of wines: first and foremost of crus, of grapes, but also vintages always with this desire to capture the quintessence of finesse and elegance that Champagne can offer when it is served lovingly. Read more
