Made strictly according to the Traditional Method, it offers a dry, taut and structured sip, enhanced by a fine perlage. The bouquet recalls pineapple and tropical fruit, evolving towards spicy notes and fragrant hints of yeast. On the palate, the Champagne is crisp and rounded, standing out for its remarkable persistence of flavour.
Where does it come from
This wine is produced in Crouttes-sur-Marne, in the heart of Champagne, thanks to the dedication of Bourgeois-Diaz. The vineyards are rooted in calcareous-clay soils which give the aromatic profile extreme clarity and a precise texture. The vines, around forty years old, are cultivated following the principles of organic and biodynamic agriculture. The careful approach of the family, active for four generations, ensures that each harvest expresses the authentic soul of the region.
How is it produced
The manual harvest allows for a rigorous selection of the bunches before traditional pressing. Vinification takes place in steel tanks and oak barrels to give solidity and precision to the blend. Subsequently, the wine undergoes secondary fermentation in the bottle following the rules of the Traditional Method, maturing for twenty-four months on the lees. The final disgorgement in Brut Nature style, without any added sugar, preserves the original vibrant freshness of the sip.
