On the nose it is vibrant, very complex and characteristic. The aromas of green pepper, tomato leaf and hard peach perfectly complement the floral scents, the mineral note of flint, and the slight hints of clary sage.

A rich landowner of noble origins, a friar and a piece of land on which to build the first monastery in the area of Farra d’Isonzo … this is how the ancient legend that gave the estate its name came into existence. A more recent story begins in 1975 with the establishment of Borgo Conventi and with the promise to produce fine and elegant wines. A commitment, reasserted in 2001 when the estate was acquired by the Folonari family, which translated into a boost in production while maintaining utmost respect for the tradition and the origins. Soil composition The soil of the Collio DOC is a friable mixture of marls and sandstone from the underlying stratified layers, and usually it is clayey in the higher grounds and fine-grained at the foot of the hill slopes.
Cultivation system Guyot and Sylvoz.
Plants per hectare 4000-7000
Fermentation 10 days.
Wine making Fermentation: the grapes are harvested in the early hours of the day, followed by light crushing and temperaturecontrolled fermentation in stainless steel tanks for 10 days. A variably small percentage of selected grapes undergoes cold maceration before light crushing.
Aging Once fermentation is completed the wine remains on the fine lees until spring, when it is bottled.
