It was the slaves who discovered that the fermentation of molasses, a byproduct of sugar processing, could produce a high-alcohol liquor. The Demerara River, which flows through Guyana, gives its name to the county of the same name and to the sugar typical of this region, characterized by large, dark grains and a delicate, enveloping flavor.
