Soffocone di Vincigliata by Bibi Graetz is a refined still red wine from Tuscany, created from a meticulous blend of Sangiovese, Canaiolo Nero and Colorino. Visually, it displays an intense ruby red colour, opening up to notes of coffee and cocoa and wild berries. On the palate, it reveals a harmonious and complex character, distinguished by a structured softness and excellent overall balance. The finish is very long and persistent, making it ideal to accompany roasts, game and mature cheeses.

Where it comes from

The grapes for this label come from the hills surrounding Florence, specifically in the Fiesole area. Here, the vines take root in clay and galestro soils, with a particular preference for land rich in granitic sand and granite outcrops. The wine's name pays homage to the Castello di Vincigliata and the legend of the White Lady who, according to local tales, haunts its walls. In this region, Bibi Graetz enhances the agricultural vocation through organic and sustainable management of his vineyards.

How it is produced

The vines are trained using the espalier system with Guyot pruning. Once in the winery, the grapes undergo fermentation in large steel vats, supported by daily manual punch-downs. This process facilitates optimal extraction of colour and aromatic components, precisely defining the structure of the red. Maturation involves ageing in wooden barrels for between fifteen and eighteen months, giving the wine complexity and balance, a hallmark of Bibi Graetz.
